Feta & Parmesan Stuffed Sesame Chicken

Serves 4

Per serve:



  1. Preheat oven to 180C.
  2. Combine feta, parmesan, lemon rind, salt and pepper in a mixing bowl.
  3. Make a cut in the thickest part of each chicken breast and stuff with the cheese mixture. Fold the chicken lengthwise to enclose the filling and secure with toothpicks.
  4. Brush the chicken with olive oil, sprinkle with salt and sesame seeds.
  5. Heat a non-stick frying pan over medium heat, add the extra olive oil and cook the chicken for 4 minutes each side.
  6. Place on a baking tray lined with non-stick baking paper and bake for 10 minutes or until cooked through.
  7. Allow to stand for 5 minutes, then slice and serve.
