Easy Chicken in Peanut Sauce

Serves 4

Per serve:



  1. Dissolve stock cubes in cup of hot water.
  2. Combine onion, garlic and butter in a large microwave proof dish. Cook on high for 3 minutes.
  3. Stir in stock, satay sauce, mustard, curry powder, cardamom and Tabasco sauce.
  4. Add chicken. Cook on high 3 minutes. Stir, then cook for another 3 minutes.
  5. Add broccoli, bok choy and mushrooms. Cook another 10 minutes, stirring every few minutes.
