Beef & Eggplant Kebabs

Serves 4

Per serve:



  1. Trim any fat off the meat and cut into bite sized pieces.
  2. Separate the onion into pieces.
  3. Place the meat, onion and eggplant into a bowl. Mix the remaining ingredients together and pour over the beef, tossing until coated.
  4. Cover and refrigerate for several hours, or overnight.
  5. Thread the meat onto skewers , alternating with onion pieces and eggplant.
  6. Cook over medium heat on a barbeque for 6-10 minutes, turning once or twice and basting with the marinade.
