Spinach with Lemon, Garlic & Pine Nuts

Grams of protein = 0
- 3 tablespoons pine nuts
3 tablespoons extra virgin olive oil
2 cloves garlic, finely sliced
400g baby spinach leaves
1 tablespoon lemon juice
salt and freshly ground black pepper to taste
- Place pine nuts in a large non stick fry pan and toast over medium heat until lightly golden. Set aside.
Sauté the garlic in 2 tablespoons of the olive oil, then add the spinach and stir until wilted.
Drain spinach well and return to the pan. Add lemon juice, remaining olive oil, salt and pepper.
Sprinkle with pine nuts and serve.
