Flourless Oranges & Lemons Cake

Serves Makes 12 slices

Per serve:



  1. Place oranges, lemons and water in a large saucepan and simmer, covered, stirring occasionally for 1 ½ hours over low heat or until fruit is very soft.
  2. Strain the water from the oranges and lemons and allow to cool. Cut the fruit in half and remove the seeds.
  3. Place orange and lemons (including skins) in blender and blend till smooth.
  4. Preheat oven to 180°C. Lightly spray a 22cm springform tin with canola spray and line with baking paper.
  5. Beat eggs, eggwhites, Splenda, and baking powder until pale and fluffy. Fold in almond meal and the pureed orange and lemon mixture.
  6. Spoon into prepared tin and bake for 20-25 minutes or until skewer comes out clean.
  7. Place tin on wire track to cool.
  8. Serve with thick cream.
