Roasted Pumpkin and Cauliflower Lasagne

Serves 6

Per serve:



  1. Preheat oven to 180C.
  2. In a large mixing bowl combine pumpkin, cauliflower, onion, garlic, olive oil, salt and pepper. Mix well.
  3. Line an oven tray with a sheet of baking paper. Pour in the vegetables and bake for 30-40 minutes, turning occasionally until vegetables are just tender.
  4. Arrange 2 Power Wraps on base of an oiled lasagne dish. Spoon over of the roasted vegetables and of the crumbled feta. Repeat with the Power Wraps, vegetables and feta, finishing with a layer of Power Wraps.
  5. Place the cream and stock in a jug and whisk with a fork to combine, pour over the lasagne.
  6. Place the Empower Bread, walnuts and parmesan cheese into a food processor and process until mixture resembles coarse breadcrumbs. Spoon breadcrumb mixture evenly on top of the lasagne.
  7. Bake for 30-35 minutes or until the top is golden brown and crispy.
