Baked Egg Tostada

Serves 4

Per serve:



  1. Preheat oven to 180C.
  2. Heat olive oil in a large frying pan. Cook onion for 5 minutes or until softened.
  3. Add tomato, capsicum, balsamic vinegar and brown sugar. Bring to a gentle simmer and cook uncovered for 15-20 minutes, stirring occasionally. Season extra salt and pepper to taste.
  4. Brush the GF Wraps with melted butter and place each wrap in a shallow, ovenproof bowl.
  5. Spoon tomato mixture onto the centre of the wraps.
  6. Make a shallow depression using a spoon in the centre of the tomato mixture and gently break an egg into each hole.
  7. Cover each bowl with foil and bake in the oven for around 15-20 minutes, or until eggs are cooked to your liking.
  8. Remove from oven. Season with extra salt and pepper, and serve.
