Zucchini, Onion & Capsicum Muffins

Serves 8

Per serve:



  1. Preheat oven to 180C.
  2. In a large bowl, beat the eggs, add onion, cheese, zucchini and capsicum. Stir together well.
  3. Add soy flour, baking powder & garlic salt. Stir to combine.
  4. Fill 8 greased muffin pan until almost full. Bake for about 30 minutes.
  5. Remove from pan & cool on a wire rack.
