Pea & Ham Soup with Parmesan Wafers

Grams of protein - 39
- 100g lean bacon, diced
200g cauliflower, chopped
100g onion, chopped
1 chicken stock cube
100g Parmesan cheese, grated
- Place bacon, cauliflower, onion and peas into a saucepan and cook over low heat for 10 minutes.
Add 500ml hot water and stock cube. Bring to the boil and simmer for 10 minutes.
Place tablespoons of Parmesan cheese onto baking tray lined with baking paper. Spread out slightly to form an even circle. Bake at 200C for 5-6 minutes or until a rich golden colour. Carefully remove to a wire rack to cool. They will become crisp on cooling.
Puree soup mixture and serve with parmesan wafers.
