Mushroom Omelette

Serves 1

Per serve:



  1. In a bowl whisk eggs, cheese and chives.
  2. Melt butter in a non-stick frying pan then add egg mixture.
  3. Cook for 3-5 minutes or until underneath is golden brown and top has set.
  4. Spoon mushrooms over egg on one side.
  5. Fold omelette in half and slide onto a warm serving plate.
