Little Zucchini & Bacon Frittatas

Serves 6

Per serve:



  1. Preheat oven to 180C.
  2. Grate zucchini, squeeze out excess juice.
  3. Whisk eggs, crumbled stock cube and cream in a bowl, season with salt and pepper.
  4. Stir through zucchini and bacon.
  5. Pour mixture into 6 greased muffin tins.
  6. Bake 20-25 minutes or until frittatas are firm.
