Caramelised Onion Frittata

Serves 2

Per serve:



  1. Heat oil in a large frying pan, add onions and cook for 15-20 minutes until caramelized and golden brown. Set aside.
  2. In a bowl beat eggs and cream. Add basil. Add salt and pepper to taste.
  3. Pour egg mixture onto onions in pan and cook over a medium heat for 4-5 minutes.
  4. Sprinkle with grated cheese and finish cooking under a preheated grill of 3-4 minutes or until frittata is set.
  5. Slide frittata out of pan onto a serving platter and serve hot or cold.
