Pumpkin & Asparagus Frittata

Serves 2

Per serve:



  1. Heat oil in a frying pan, add bacon and onion and cook for 2-3 minutes.
  2. Arrange cooked pumpkin and asparagus on top of bacon and onion mixture.
  3. Whisk remaining ingredients together in a bowl until combined. Season with salt and pepper.
  4. Pour egg mixture over vegetables and cook for 5-7 minutes on a medium heat or until set.
  5. Place frittata under a preheated grill for 2 minutes or until golden brown.
  6. Serve hot or cold with a salad.
