Char-Grilled Chicken & Zucchini Salad

Serves 2

Per serve:



  1. Prepare dressing: finely chop tomato and onion, combine with olive oil, balsamic vinegar, basil, and salt & pepper to taste. Set aside.
  2. Heat a cast iron grill pan or barbeque. Brush with 1 tablespoon of oil and cook chicken. Set aside.
  3. Brush grill pan with remaining oil and cook zucchini and capsicum for 5-10 minutes or until slightly charred.
  4. Place lettuce leaves onto serving dishes.
  5. Top lettuce with chicken strips, zucchini and capsicum.
  6. Drizzle with dressing and serve.
