Chicken & Almonds

Serves 2

Per serve:



  1. Place Splenda, ginger , soy sauce, peanut oil, sesame oil and crushed garlic in a bowl. Add the chicken and mix thoroughly.
  2. Roast almonds in a 200C oven for 10-15 minutes until they smell sweet and nutty. Remove from oven and allow to cool. Roughly chop the almonds and set aside.
  3. Heat wok, add chicken mixture and cook for about five minutes until chicken is nearly cooked.
  4. Remove chicken and set aside. Add vegetables to wok and lightly stir fry.
  5. Add chicken and heat through until just cooked.
  6. Add the almonds, stir through and serve.
