Cajun Spiced Fish with Warmed Salad

Serves 2

Per serve:



  1. Brush fish with a little melted butter, sprinkle with Cajun spices.
  2. Fry fish in a non-stick fry pan in a little butter until cooked through.
  3. Meanwhile, melt butter in a saucepan, add onion, celery, carrots. Cook for 2-3 minutes or until slightly softened.
  4. Add parsley and lemon juice, heat through for 2 minutes.
  5. Place shredded lettuce on a serving plate.
  6. Place carrot mixture on top of shredded lettuce, arrange fish on top and serve.
