Café Latte Jelly

Serves 4

Per serve:



  1. Place the 2 tablespoons of water in a small bowl, mix through the gelatine to soften.
  2. Heat 1/2 cup of the 1 & 1/2 cups of water in a small saucepan. Do not let it boil.
  3. Take off the heat and add the gelatine and stir until it dissolves.
  4. Add the Splenda tablets and stir until dissolved, then add the remaining water and espresso.
  5. Allow mixture to cool. Add the cream, stir thoroughly.
  6. Pour into 4 cafe latte glasses. Allow to chill in the refrigerator for at least 4 hours.

Tasty Tip:

This is lovely served with a bit of whipped cream and sprinkled with a few whole coffee beans.
