Zucchini, Chive & Red Onion Tart with Rocket & Pine Nut Salad

Serves 4

Per serve:



  1. Preheat oven to 180C.
  2. Heat oil in a frying pan, add onion and zucchini and cook over medium heat for 10 minutes.
  3. Toast pine nuts in oven for 5-10 minutes, shaking occasionally until golden. Set aside.
  4. Prepare salad by combining rocket, olive oil, vinegar and salt and pepper to taste.
  5. Mix together egg, parmesan and chives. Season with salt & pepper.
  6. Pour half the egg mixture into a quiche dish. Place onion and zucchini on top, then pour in the remaining egg mixture. Dot with feta cubes and season with extra freshly cracked black pepper.
  7. Bake in oven for 30 minutes or until the top of the tart feels just firm to the touch.
  8. Serve sliced into wedges salad sprinkled with toasted pine nuts.
