Chicken San Choy Bau
1 tablespoon olive oil
1 teaspoon sesame oil
500g chicken mince
1 tablespoon soy sauce
1 tablespoon fish sauce
50g spring onion, finely sliced
50g carrot, finely sliced
2 tablespoons fresh coriander, finely chopped
100g large lettuce leaves
- Heat olive oil and sesame oil in a non-stick frying pan. Add chicken and cook for 3-4 minutes or until chicken is browned.
- Add soy sauce, fish sauce, spring onions and carrots. Cook for a further 2-3 minutes.
- Stir through coriander.
- Spoon into lettuce leaves and serve.
