Chocolate Rush Fudge Brownies
1 box Empower Foods Chocolate Rush Muffin Mix
100g almond meal
50g walnuts, roughly chopped
2 tbs cocoa, sifted
20 tablets Splenda, dissolved in a little hot water
2 free range eggs
½ cup vegetable oil
½ cup water
2 tsp vanilla essence
- Preheat oven to 180°C.
- In a mixing bowl combine the muffin mix, almond meal, walnuts and cocoa. Stir well to combine.
- Add remaining ingredients and mix well.
- Pour into a greased 20cm square cake tin and bake for 10 minutes or until centre has just set.
- Remove from oven and allow to cool completely before removing from tin and cutting into 16 squares.
Slice up the entire batch and store it in a zip-lock bag in the freezer.
