Chocolate Rush Fudge Brownies

Ingredients:
1 box Empower Foods Chocolate Rush Muffin Mix
100g almond meal
50g walnuts, roughly chopped
2 tbs cocoa, sifted
20 tablets Splenda, dissolved in a little hot water
2 free range eggs
½ cup vegetable oil
½ cup water
2 tsp vanilla essence

Method:

  1. Preheat oven to 180°C.
  2. In a mixing bowl combine the muffin mix, almond meal, walnuts and cocoa. Stir well to combine.
  3. Add remaining ingredients and mix well.
  4. Pour into a greased 20cm square cake tin and bake for 10 minutes or until centre has just set.
  5. Remove from oven and allow to cool completely before removing from tin and cutting into 16 squares.

Tasty Tip:
Slice up the entire batch and store it in a zip-lock bag in the freezer.
